Hopi Red amaranth originates from the Hopi people, the Pueblo Indians from what is now northeastern Arizona. This plant is rich in vitamin C, iron, fiber, and protein. It can also be used as a natural dye.
Planting: Indoors 4-6 weeks before the last frost, sow at a depth of 1/8″.
Harvesting: Leaves can be harvested throughout the season or one seed head at a time.
The plant has a well-filled core, good tolerance to scorching, and low susceptibility to bolting. A heritage variety.
